they are inorganic dyes from minerals. As they are generally
produced by extraction, they are not pure products. They are
obtained
as a mixture with other natural products like fats, carbohydrates or
proteins from the original source. However in some cases the
isolation of the pure dye has been attained. Depending on the dye,
they can be provided in watersoluble form, oilsoluble form or both
types. After development of the dyestuffs industry, the use of synthetic
colours has increased at the expense of natural colours. But,
nowadays the use of natural colours is experiencing a great increase
because consumers are everyday more concerned about natural food and
marketing uses natural colours as an added value. Another reason
that
favours the use of natural colours is the important discordance
between the legislations of different countries regarding synthetic
colours which difficulties the exportation. Natural colours are more
widely permitted, although there are also some differences between
