| They are organic dyes produced by chemical synthesis. Synthetic
dyes that are actually permitted by food legislation are
watersoluble
products. In their pure state they are presented in powder form. For
colouring, dyes have to be previously dissolved or powder has
to be dispersed in the product. By blending different synthetic dyes
the
whole range of shades may be obtained. Purity of synthetic food colours is around 80-90%. The rest of
components are basically inorganic salts and small quantities of
subsidiary products from manufacturing process, which maximum ranges
are clearly regulated in EEC specifications. Consequently synthetic
food colours have always a uniform quality that makes application
easy, gives uniform shades and guarantees that colours do not have
any toxicological hazard.
